Clean the leek, cut the upper 1/3 and wash thoroughly. Cut the leek into slices. Peel and finely chop the onion. Peel and grate ginger
Heat 2 tablespoons of oil in a frying pan. Sauté the onion in it until transparent. Add ginger and leek and steam briefly. Add 50 ml of water, cover and simmer for 5-8 minutes at low heat, stirring occasionally, until the leek is soft. Season with salt and pepper
Cook the eggs in boiling water for 5-6 minutes. Heat 1 tsp. oil in a frying pan. Fry the bacon in it for 3-4 minutes until crisp. Take out and let drain on kitchen paper
Quench and peel the eggs. Arrange the leek, 1 egg and 2 slices of bacon in bowls or plates and serve immediately. Delicious with baguette
