Cook the pasta in boiling salted water for about 8 minutes. In the meantime, clean and wash the peppers and cut them into small pieces. Blanch in boiling salted water for 3 minutes, then drain.
Clean, wash and slice the mushrooms. Peel garlic and press it through the garlic press. Wash the tomatoes and cut them into thin slices. Heat oil. Sauté garlic briefly. Fry the mushrooms for about 4 minutes, turning them over.
Add the peppers and tomatoes. Season with salt and pepper. Add stock and cook for 3 minutes. Wash herbs, chop finely and stir in. Flavour again. Arrange pasta and vegetable sauce sprinkled with grated parmesan.
Serve garnished with fresh herbs.
