Spaghetti with tomato salsa and ciabatta crumbs

Ingredients

  • 400 g Spaghetti
  • 7-10 Tbsp salt and pepper
  • 750 g ripe tomatoes
  • 1 collar Basil
  • 7 TABLESPOONS good olive oil
  • 2 Garlic cloves
  • 2 discs (30 g each) Ciabatta (from the day before)

Directions

    Cook spaghetti in 3-4 l boiling salted water (approx. 1 teaspoon salt per litre) according to package instructions.

    In the meantime, wash and chop the tomatoes for the tomato salsa. Wash the basil, shake dry and cut the leaves into fine strips. Mix the tomatoes, basil and 4 tbsp. oil. Season with salt and pepper.

    Peel garlic and dice very finely. Crumble the bread. Heat 3 tablespoons of oil in a frying pan. Fry the bread crumbs in it until golden brown. Fry the garlic briefly.

    Drain the pasta and put it back into the pot. Add the tomato salsa and mix everything. Season to taste with salt and pepper. Sprinkle with the breadcrumbs.
