Strawberry farmer cake with pine nuts

Ingredients

  • 1 kg Strawberries
  • 200 g soft butter
  • some soft butter
  • 150 g Sugar
  • 1 pck. Vanilla sugar
  • 7-10 Tbsp Salt
  • 4 Eggs (Gr. M)
  • 100 g Cornstarch
  • 200 g Flour
  • some Flour
  • 3 teaspoons, gestr. Baking Powder
  • 50 g Pine nuts
  • 50 g demerara sugar
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Aluminium foil

Directions

    Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer). Wash, clean and drain the strawberries and, depending on size, cut them in half or quarters.

    Mix 200 g butter, sugar, vanilla sugar and 1 pinch of salt with the whisk of the mixer for 4-5 minutes until creamy. Alternately stir in eggs and 1 tablespoon of cornflour. Mix 200 g flour, rest of starch and baking powder and stir in briefly.

    Smooth the dough in a greased and floured baking tray (approx. 30 cm Ø). Spread strawberries on top. Sprinkle with pine nuts and brown sugar. Bake in a hot oven for approx. 45 minutes (stick test). If necessary, cover the last 10 minutes with aluminium foil.

    Let it cool down on a cake rack. Serve dusted with icing sugar. Whipped cream tastes good with it.
