Clean the salad, pluck roughly, wash and drain thoroughly. Peel and finely dice the shallots. Season vinegar with salt, pepper and sugar. Fold in the oil. Fold in shallots.
Cut the fish crosswise in half and cut into 3-4 slices each. Mix honey and teryiaki sauce. Arrange salad and salmon on plates. Drizzle salad with vinaigrette and fish with teriyaki-honey mixture.
