For the ginger and sesame sauce, peel the ginger and grate it finely. Mix with agave syrup, sesame oil and lime juice (or shake in a screw glass). Season to taste with salt.
For the salad, peel onions and cut into fine strips. Mix with vinegar and 2 pinches of salt in a bowl, put aside.
Meanwhile clean the kohlrabi and radish, peel them and cut them with a spiral slicer into vegetable spaghetti (or cut them into fine strips). Wash parsley and mint, shake dry and pluck off leaves. Wash the cucumber, cut it in half lengthwise, remove the seeds and cut into fine cubes.
Mix the salad ingredients. Mix in dressing for serving.
