\"Sweet as Summer\" salad with lemon and herb dressing

Ingredients

Servings: 4
  • 400 g Grilled vegetables (e.g. zucchini, aubergine, peppers)
  • 8 TABLESPOONS Olive oil
  • 7-10 Tbsp salt, pepper
  • 500 g Lettuce (e.g. rocket, lettuce, radicchio)
  • 200 g Date tomatoes
  • 400 g Honeydew melon
  • 50 g Parmesan (piece)
  • 1 Garlic clove
  • 3 Stem(s) fresh herbs (e.g. basil, mint, oregano)
  • 125 g Whole milk yoghurt
  • 1-2 TABLESPOONS Dijon mustard
  • 1 TABLESPOON white balsamic vinegar
  • 7-10 Tbsp Juice from 1⁄2 Lemon
  • 7-10 Tbsp Sugar
  • 8 discs Bündner Fleisch (alternative: Parma ham; but then it is from pork!)

Directions

    Clean and wash the vegetables selected for the grill and cut them into large pieces or strips. Heat 2 tablespoons of oil in a grill pan or normal frying pan. Fry the vegetables for 5-8 minutes.

    Season with salt and pepper.

    Wash salads, shake well dry. Wash tomatoes and cut them lengthwise into halves or quarters depending on size. Cut the skin off the honeydew melon. Cut the flesh into small cubes. Put everything in a large bowl and mix loosely.

    Finely grate the parmesan.

    For the dressing, peel and finely chop the garlic. Wash herbs, shake dry, pluck off leaves and chop finely. Mix yoghurt, mustard, balsamico and lemon juice. Fold in 6 tablespoons of oil.

    Season to taste with salt, pepper and sugar. Add dressing and grilled vegetables to the other ingredients in the bowl. Mix everything well. Arrange salad or fill up. Cover with Bündner meat in small rolls.

    Sprinkle with parmesan. Now off to the country!
