Sweet potato salad with breaded goat cheese and walnut and apple sambal

  • 1 kg Sweet potatoes (preferably small)
  • 4 Goat cheese thaler (approx. 30 g each)
  • 3 TABLESPOONS Flour
  • 1 egg (size M)
  • 50-75 g Breadcrumbs
  • 3 small apples (about 120 g each)
  • 50 g Walnut kernel halves
  • 6-8 TABLESPOONS Vinegar
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp Salt
  • 1/2-1 coated Tsp Sambal Oelek
  • 1 Head radicchio salad
  • 1/2 Head frisée salad
  • 2 TABLESPOONS Oil

Directions

    Cook potatoes in boiling water for about 25 minutes, rinse with cold water, remove skin generously. Leave to rest for at least 30 minutes, then cut into slices. Turn the goat's cheese taler one after the other in flour, beaten egg and breadcrumbs. Wash apples, quarter them and cut out the core. Finely dice 2 apples, chop walnuts.

    Boil up vinegar and sugar. Add the diced apples. Season with salt and Sambal Oelek. Pour over the sweet potatoes while still hot. Clean and wash the salads. Cut radicchio a little bit coarser, pluck frisée stalks from the stalk. Mix the salad ingredients carefully. Cut 1 apple into wedges. Fry the breaded cheese taler in hot oil for 2-3 minutes, turning until golden brown.
