For the marinade, peel and chop the garlic. Mix with beer, 1 tsp. pepper and oyster sauce. Pat the steaks dry and pour the marinade in a bowl. Cover and leave to marinate for 2 hours.
Peel and wash the potatoes, cut into thick chips and dab dry. Heat frying oil in a wide pot or deep fryer to approx. 140°C. Fry the potatoes in it in portions for about 2 minutes.
Lift out and spread out on kitchen paper.
Preheat oven (electric cooker: 150°C/circulating air: 125°C/gas: stage 1). Lift steaks out of the marinade and pat dry. Heat 1 tablespoon of oil in a frying pan. Brown the first steak in it for 1 minute on each side.
Season with salt and pepper. Take the steak out and put it on a tray. Fry the second steak in the same way. Bake both steaks in the oven for 12-14 minutes for a pink steak.
In the meantime heat the frying oil to approx. 180°C. Fry the French fries again in portions for 2-3 minutes. Lift out. Season all in a bowl with coarse salt. Serve with the steaks.
