Wash parsley and chives and dab dry. Cut the chives into fine rolls. Pluck off the parsley leaves and chop finely. Mix stock, juice, vinegar and mustard. Season with salt, pepper and sugar. Drop the oil into the sauce. Mix in the herbs.
