Tuna steaks with Maltaise sauce

Ingredients

Servings: 4
  • 1 cauliflower
  • 1 Courgette
  • 1 Onion
  • 600 g small new potatoes
  • 2 TABLESPOONS Oil
  • 1 TEASPOON Vegetable broth
  • 1 untreated orange (e.g. blood orange)
  • 100-125 g Butter
  • 2 fresh egg yolks
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Tuna steaks (approx. 150 g each)

Directions

    Clean and wash the vegetables, divide them into florets or cut them in half lengthwise and slice them. Peel and finely chop the onion.

    Wash the potatoes thoroughly and halve them if necessary. Cover and cook for about 20 minutes. Heat 1 tablespoon of oil in a large pan (with lid). Sauté the onion and zucchini in it, remove. Sauté the cauliflower briefly in the frying fat. Add approx. 200 ml water and broth. Bring to the boil, cover and stew for 8-10 minutes. Add zucchini and onions and continue to steam briefly.

    For the Maltese sauce, wash the orange hot, cut in half. First rub the peel off one half, then squeeze it. Cut the other half into slices. Heat butter over low heat. Bring to the boil briefly, skim and let cool a little. Beat egg yolk and juice in a hot water bath until foamy. Stir in liquid butter in a thin stream. Add orange zest. Season to taste.

    Wash the tuna, dab dry. Fry in 1 tablespoon of hot oil per side for 3-4 minutes. Season with salt and pepper. Drain the potatoes and mix with the vegetables. Season to taste. Arrange everything with the sauce and garnish.
