Roll out the puff pastry on a floured work surface. Cut out four circles. Butter the Tartelettes moulds, sprinkle with breadcrumbs and line with the dough. Prick the pastry bases several times with a fork.
Mix grated Allgäuer Emmental and Allgäuer mountain cheese with eggs, flour and cream. Season with salt, pepper and nutmeg. Then spread the cheese mixture evenly into the Tartelettes moulds.
Bake in the preheated oven at 200 degrees (fan oven: 180 degrees) for about 30 minutes.
Peel the asparagus, cut into bite-sized pieces and cook until firm to the bite. Marinate with vinegar and oil, salt and pepper. Serve portion by portion with the still hot cheese cakes.
