Roughly chop the almonds. Roast in a pan without fat. Add the milk, bring to the boil briefly and leave to stand for 15 minutes. Then pour through a sieve. Put 1 star anise in each glass. Fill up with coffee.
Heat the milk, do not boil it, and froth it vigorously. Spread foam on the coffee. Sprinkle with brown sugar. Serve decorated with small praline skewers.
