Peel and quarter the apples and remove the cores. Weigh 1 kg of flesh. Dice apples finely and sprinkle with lemon juice
Mix apples, jam sugar and cinnamon well in a large pot. Bring to the boil while stirring constantly, boil for exactly 3 minutes from the start of foaming
Remove jam from the stove, remove cinnamon. Stir in honey. Fill jam brimful into prepared twist-off jars, close. Let cool upside down
