Böregi (Filo Feta cigars) with zucchini and yoghurt

Ingredients

Servings: 18
  • 1 Spring onion
  • 200 g Feta cheese
  • 2 Yolks (size M)
  • 1 package (approx. 300 g, 18 leaves each) triangular strudel dough sheets filo or yufka
  • 8 TABLESPOONS Olive oil
  • 1 (approx. 300 g) Courgette
  • 7-10 Tbsp dried chili flakes
  • 7-10 Tbsp Salt
  • 1 Garlic clove
  • 250 g Turkish yoghurt (10 % fat)
  • baking paper

Directions

    Clean and wash the spring onion and cut into fine rings. Crumble the cheese finely and mix with the spring onion and 1 egg yolk

    Fill the short side of the dough sheets with approx. 1 tbsp. cheese cream each and roll them up into "cigars". Distribute on a baking tray lined with baking paper. Whisk 1 egg yolk and 2 tbsp. water. Spread "cigars" one after the other thinly with egg yolk and 4 tablespoons of oil

    Bake in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for approx. 15 minutes until crispy. Wash, clean and slice the zucchini. Heat 4 tablespoons of oil in a large frying pan. Fry the zucchini slices in it in portions for about 4 minutes while turning. Season with salt and chili flakes

    Peel and coarsely chop the garlic. Mash 1/4 tsp salt and garlic finely in a mortar. Mix yoghurt and garlic paste. Arrange "cigars", zucchini and yoghurt
