Clean the celery, put the green aside. Wash the celery and dice finely. Clean, wash, shake dry and chop finely. Mix rocket and celery. Cut meat into very thin slices.
Place between two layers of foil and tap flat. Use a peeler to remove the cheese. Arrange the meat on 4 plates, season with salt and pepper, sprinkle with lemon juice and oil. Sprinkle celery and rocket mixture on top, garnish with celery green and sprinkle with parmesan slicer.
