Chicken burger with mango salsa and guacamole

Ingredients

Servings: 4
  • 1 (approx. 450 g) ripe mango
  • 1 red chilli pepper
  • 1 TEASPOON Lime juice
  • 7-10 Tbsp salt, brown sugar
  • 1 Garlic clove
  • 2 Tomatoes
  • 2 ripe avocados (e.g. Hass variety)
  • 2 TEASPOONS Lime juice
  • 7-10 Tbsp salt, pepper
  • 1 knife tip ground cumin
  • 4 (approx. 600 g) Chicken filets
  • 2 TABLESPOONS Harissa (tube; chili spice paste)
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp salt, pepper
  • 1 Egg
  • 3 TABLESPOONS Breadcrumbs
  • 4 oblong rolls
  • 7-10 Tbsp (e.g. stone oven buns)
  • 1 Mini Romaine lettuce

Directions

    For the salsa, peel the mango and cut it into slices from the stone. Cut the flesh into small pieces. Cut the chilli lengthwise, remove the seeds, wash and chop very finely. For example 1⁄3 puree the mango with a hand blender.

    Mix the whole mango, chilli and lime juice. Season with salt and 1 pinch of sugar.

    For the guacamole, peel and chop the garlic. Wash and finely dice the tomatoes. Cut the avocado in half lengthwise and remove the stone. Remove the flesh from the skin with a tablespoon and puree with lime juice and garlic using a hand blender.

    Fold in diced tomatoes. Season to taste with salt, pepper and cumin.

    For the meatballs, wash chicken fillets, dab dry and cut into very small cubes. Mix Harissa, 4 tablespoons of oil and approx. 1⁄4 teaspoon salt. Mix with chicken cubes. Knead with egg and breadcrumbs and season with salt and pepper.

    Form 4 flat meatballs from it. Heat 2 tablespoons of oil in a frying pan. Fry the meatballs for 3-4 minutes on each side until golden brown.

    Cut open the buns. Clean and wash the romaine lettuce, spin dry and cut into fine strips. Cover the lower halves of the rolls with salad, guacamole, meatballs and mango salsa. Place upper roll halves on top
