Chili con carne salad with feta cheese, corn and minced meat

Ingredients

  • 1 Garlic clove
  • 3 TABLESPOONS Sunflower oil
  • 300 g mixed minced meat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 can(s) (212 ml) Vegetable corn
  • 1 can(s) (212 ml) Kidney beans
  • 150 g Feta cheese
  • 200 g red pepper
  • 1 red onion
  • 100 g Rocket salad
  • 4 TABLESPOONS Wine vinegar
  • 1 TEASPOON Mustard
  • 1 TABLESPOON Honey
  • 7-10 Tbsp Chilli powder
  • 4 Stem(s) Parsley

Directions

    Peel and slice the garlic. Heat 1 tablespoon of oil in a frying pan. Fry the minced meat for about 5 minutes. Coarsely chop with a spatula. Fry the garlic for the last minute.

    Season with salt and pepper. Pour the corn into a sieve and drain well. Pour beans into a sieve and rinse. Cut feta into cubes. Clean, wash and dice the peppers. Peel and roughly dice the onion.

    Clean, wash and roughly chop the salad. Mix vinegar, mustard, honey and 2 tablespoons of oil. Season with salt and chilli powder. Mix the prepared salad ingredients. Wash parsley, shake dry, pluck leaves from the stalks and cut into strips.

    Arrange salad in small bowls and sprinkle with parsley. Roasted bread tastes good with it.
