Coarsely chop both chocolate bars. Heat cream and milk, dissolve chocolate in it. Beat the egg white with the whisk of the hand mixer until stiff. Add 35 g sugar and lemon juice.
Cut off small dumplings with 2 teaspoons. Pour into boiling water and cook in a closed pot for about 4 minutes. Mix cinnamon and 1/2 teaspoon sugar. Arrange the soup in bowls with the snow dumplings. Sprinkle with cinnamon sugar.
