Prepare the spaetzle in water according to the instructions on the packet. Wash apples, grate dry, quarter them, remove core and cut apple quarters into thin slices. Drain the spaetzle and let it drain. Caramelise 100 g sugar in a pan, add apple slices and spaetzle, deglaze with lemon juice and fry for about 4 minutes
Wash the mint, shake dry and cut into strips except for something to decorate. Mix 1 tablespoon of sugar with cinnamon. Arrange spaetzle on plates, sprinkle with cinnamon-sugar mixture and decorate with mint
