Wash the potatoes and cook for 15-20 minutes. Then rinse with cold water, peel and leave to rest for 1 hour. Peel onions and cut them into fine slices. Dice bacon. Cut potatoes into slices. Heat some lard in a pan.
Fry the potatoes in it in portions while turning them for about 10 minutes until golden brown. Season with salt and pepper. Add some clarified butter per portion. Fry bacon and onions until golden brown. Add potatoes and mix carefully. Sprinkle with parsley and serve garnished
