Drain the apricots and collect the juice. Cut the apricots into slices, put about 6 slices aside for decorating. Caramelise 1 tablespoon honey in a coated pan.
Deglaze with approx. 3 tablespoons of apricot juice, add the apricots, swivel through and let cool down. Mix cheese with 1 tablespoon honey. Layer apricots and cream cheese in glasses, cover with remaining apricot wedges.
Sprinkle with 1 tablespoon of honey and decorate with mint.
