Select the berries, wash them carefully and let them drain. Strip the currants from the panicles with a fork. Quarter the strawberries. Carve peaches crosswise, blanch with boiling water, rinse cold and skin.
Halve the peaches, stone them and then cut them into pieces. Squeeze lime. Mix fruits with lime juice and vanilla sugar.
Pour the milk into a tall mixing bowl. Add sauce powder and stir vigorously with a whisk for about 1 minute. Chill for about 10 minutes. Stir mascarpone into the vanilla sauce. Serve the fruit salad with the cream.
