Peel apples as desired, otherwise wash thoroughly and rub dry. Quarter apples, remove seeds and cut into pieces. Peel onions and cut into fine rings. Cut herring fillets into pieces. Wash dill, dab dry and chop. Mix sour cream, cream, oil and vinegar. Add the dill. Season to taste with curry, salt, pepper and sugar. Mix the herring pieces, apples and onions with the sour cream, fill into glasses and leave to stand for at least 2 hours. Garnish with dill flags
