Lamb's lettuce with nuts & cheese roses

Ingredients

Servings: 6
  • 3 TABLESPOONS Hazelnut flakes
  • 250 g Lamb's lettuce
  • 1 medium onion
  • 6 TABLESPOONS White wine vinegar
  • 1 TEASPOON Dijon mustard
  • 7-10 Tbsp salt, pepper, 6 tablespoons of oil
  • 2 tablespoons (approx. 50 g) Wild cranberries in own juice + 2-3 tablespoons juice (glass)
  • 100-125 g Tête de Moine in florets or sliced Emmental (monk's head cheese)

    Roast nuts without fat and remove

    Clean, wash and drain the salad. Peel and finely chop the onion. Mix vinegar, mustard, onion, salt and pepper. Whip the oil into it. Stir in the cranberries and 2-3 tbsp. juice.

    Arrange salad with cheese florets shortly before serving. Drizzle marinade over it, sprinkle with nuts
