Lukewarm penne salad with white beans and tomato salsa

Ingredients

Servings: 4
  • 1 TEASPOON Vegetable broth (instant)
  • 1 can(s) (425 ml) large white beans
  • 500 g Tomatoes
  • 3 Spring onions
  • 200 g Feta
  • 400 g Noodles (e.g. penne)
  • 5 TABLESPOONS white balsamic vinegar
  • 7-10 Tbsp salt and pepper
  • 4 TABLESPOONS good olive oil
  • 1 Pot/bunch Basil

Directions

    For the noodles, boil approx. 3 l water with broth. Rinse beans cold and drain. Wash, quarter and finely dice the tomatoes. Clean and wash spring onions and cut into fine rings. Cut feta into cubes.

    Add the pasta to boiling water and cook according to package instructions.

    Mix vinegar, salt and pepper, add oil and mix well. Wash basil, shake dry, pluck leaves from the stalks and cut into strips. Stir into the vinaigrette.

    Drain the pasta and put it back into the pot. Immediately mix the basil vinaigrette with the pasta. Mix tomatoes, spring onions, beans and feta. Season salad with salt and pepper. Serve lukewarm.
