Onions peel, in thin slices cut. Wash apples. Put 4 thin middle slices aside for garnishing. Quarter apples, remove core. Cut 1 apple into slices, the rest into cubes.
Sprinkle all apple pieces and slices with 2 tablespoons of lemon juice. Wash the basil, except for a few leaves, and cut into strips. Mix sour cream, yoghurt, onion slices, apple cubes, basil strips, green pepper and 2 tablespoons of lemon juice.
Season to taste with salt, pepper and sugar. Wash the maties, dab dry. Wash the salad, drain and cut into bite-sized pieces. Mix the rest of the lemon juice, some salt, pepper and sugar.
Add oil. Season again and turn the prepared salad ingredients in it. Arrange 1 double matie fillet each with salad and sour cream sauce. Garnish with apple slices, basil leaves and possibly pepper pancakes.
Add the rest of the sour cream sauce. Baguette tastes good with it.
