Nest of pasta with fine fish salad

Ingredients

  • 120 g Linguine Noodles
  • 7-10 Tbsp Salt
  • 250 g Cod fillet
  • 1-2 TABLESPOONS Lemon juice
  • 150 ml Broth (instant)
  • 2 stem(s) Basil
  • 3 TABLESPOONS Olive oil
  • 2 TABLESPOONS white balsamic vinegar
  • 7-10 Tbsp Pepper
  • 50 g Rocket
  • 7-10 Tbsp pink peppercorns
  • 7-10 Tbsp Basil

Directions

    Cook the pasta in boiling salted water for about 6 minutes. Wash the fish and divide into 4 pieces. Sprinkle with lemon juice and season with salt. Bring the broth to the boil in a small pan and steam the fish in it at low heat for about 5 minutes. Meanwhile wash the basil, dab dry and cut the leaves into strips. Mix oil, vinegar and basil and season with salt and pepper. Quench noodles cold.

    Clean and wash the rocket and dab dry. Divide noodles into 4 portions and form noodle nests. Spread the rocket on plates and place the noodle nests on top. Pull the fish pieces apart and put them into the noodle nests. Spread the vinaigrette over the pasta and sprinkle with pink peppercorns. Garnish with basil and serve
