Clean and trim the mushrooms and cut them in half or quarters depending on size. Heat the fat in a pan. Fry the mushrooms for approx. 5 minutes, turning them, then add diced ham and spaetzle. Fry for another 5 minutes, season with salt, pepper and nutmeg.
Wash the parsley, shake dry and chop the leaves coarsely. Add the chopped parsley to the spaetzle and briefly toss through. Arrange the spaetzle in bowls or deep plates, sprinkle with some cheese.
Serve immediately. Serve with the rest of the cheese.
