Clean the broccoli and put aside the leaves. Cut broccoli into fine florets, peel stems and cut into small cubes. Cook the broccoli in boiling salted water for about 3 minutes. Drain and let drain.
Cook the pasta in plenty of boiling salted water for about 10 minutes until al dente.
Meanwhile peel and chop the garlic. Clean the chilli, cut lengthwise, remove seeds, wash and cut into strips. Fry both in a very large pan in 3 tbsp. hot oil. Finely chop anchovies, add broccoli and continue steaming for about 2 minutes.
Add approx. 200 ml pasta water and broccoli leaves and bring to the boil.
Drain the pasta and mix it with the broccoli. Season to taste with salt and pepper. Sprinkle with 3 tablespoons of oil. Garnish with chilli peppers.
Drink tip: cool white wine, e.g. Malvasia bianca.
