Drain the peaches. Grate cheese finely. Clean and wash lettuce and pluck into pieces
Toast roasting. Spread each with a little remoulade and cut in half diagonally. Cover 1/2 slice of toast with 1 slice of pork loin and 1 half peach. Sprinkle the cheese on top
Bake in a preheated oven (electric range: 200 °C/ convection oven: 175 °C/gas: level 3) or under the hot grill until the cheese has melted
Arrange the salad and toast on four plates. Drizzle lettuce with lemon juice and oil. Place 1 teaspoon of cranberries on each toast. Garnish with parsley if necessary.
