Ingredients

Servings: 4
  • 4 Shallots
  • 2 Garlic cloves
  • 1 red chilli pepper
  • 1 TABLESPOON Oil
  • 2 TABLESPOONS Sugar
  • 4 TABLESPOONS unroasted peanut kernels
  • 4 TABLESPOONS Oil
  • 3 Stem(s) Coriander
  • 7-10 Tbsp Juice of 1 lime
  • 2 TABLESPOONS Soy sauce

Directions

    Peel and finely dice the shallots and garlic cloves. Clean the chilli pepper, cut lengthwise, remove seeds, wash and chop.

    Heat the oil and sauté the shallots, garlic and chilli in it. Stir in sugar until it begins to caramelize slightly. Roast the peanut kernels for about 2 minutes while stirring. Remove from the heat, stir in 4 tbsp. oil and allow to cool.

    Wash the coriander, chop finely and add to the peanuts with lime juice and soy sauce. Puree everything coarsely. If the sauce is too thick, stir in some water. Season to taste with soy sauce.
