Poké Bowls are all the rage right now! For those who find the Hawaiian national dish with salmon in the restaurant too expensive, this colourful bowl with fine dressing is just the thing for you.

Ingredients

Servings: 4
  • 250 g Basmati rice
  • 7-10 Tbsp salt, pepper
  • 1 Mango
  • 1 Avocado
  • 2 Carrots
  • 1 Cucumber
  • 1 collar Radishes
  • 2 Limes
  • 2 TABLESPOONS rice vinegar
  • 4 TABLESPOONS Oil
  • 500 g fresh salmon fillet without skin (sushi quality)
  • 2 Spring onions
  • 1 TABLESPOON black sesame

Directions

    Prepare rice in boiling salted water according to package instructions. Peel the mango. Cut the flesh from the stone and dice. Cut avocado in half and remove seeds.

    Remove the flesh from the skin and cut into slices. Peel and coarsely grate the carrot. Wash and clean the cucumber and radishes. Cut cucumber into cubes and radishes into slices.

    Drain the rice. Halve the limes and squeeze them. Mix lime juice, vinegar, salt and pepper. Stir in oil. Dab the salmon dry and cut into cubes of approx. 1 x 1 cm.

    Loosen the rice. Arrange prepared ingredients in bowls and drizzle with vinaigrette. Clean and wash spring onions and cut into rings. Sprinkle Poké-Bowls with sesame and spring onions and serve.
