Red cabbage salad with feta cheese

Ingredients

  • 60 g Pine nuts
  • 1/2 (approx. 675 g) Head red cabbage
  • 1/2 (approx. 420 g) Head iceberg lettuce
  • 1 Carrot
  • 200 g Sheep's cheese
  • 175 ml freshly squeezed orange juice
  • 25 ml white balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground white pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Olive oil
  • 75 g Raisins
  • 7-10 Tbsp Marjoram and orange slices

Directions

    Roast pine nuts in a pan without fat while turning. Clean the cabbage, cut in half and remove the stalk. Cut cabbage into very fine strips. Clean, wash and cut iceberg lettuce into strips. Clean, peel and cut the carrot into sticks. Cut feta cheese into cubes.

    Mix orange juice, vinegar, salt, pepper and sugar. Whip the oil into it. Mix red cabbage, carrots, iceberg lettuce and raisins. Pour the vinaigrette over it and let it soak well. Serve sprinkled with feta cheese and pine nuts. If you like, sprinkle with marjoram and serve garnished with orange wedges
