Wash, drain, clean and halve the strawberries. Mix cream cheese and crème fraîche, sugar and vanilla sugar with the whisk of the hand mixer until smooth.
Put the strawberries in four dessert bowls. Spread cream cheese cream on top and sprinkle 1 teaspoon of brown sugar on each. Caramelise with a kitchen gas burner or gratinate under the hot grill of the oven until the sugar has melted.
