Strawberry and Lemon Cookies

Ingredients

  • 150 g Flour
  • 1 TEASPOON Baking Powder
  • 1 pinch Salt
  • 90 g Butter
  • 75 g Sugar
  • 1 package Vanilla sugar
  • 1 Egg
  • 7-10 Tbsp Grated peel 1/2 lemon
  • 60 g crunchy oats
  • 80 g white chocolate
  • 80 g Strawberries, washed and cut into small pieces

Directions

    Preheat oven to 175° C top/bottom heat. Line two baking trays with baking paper.

    Mix flour with baking powder and salt and set aside. Cream butter with sugar and vanilla sugar. Stir in the egg, then also the flour mixture and lemon zest. Fold in chocolate chips and oat flakes.

    Either carefully fold the strawberries into the dough or first place teaspoonfuls of the dough on the baking tray and then spread the strawberries on top. I have chosen the first variation, but I would do it differently next time, as the dough gets too wet for me.

    Bake cookies in a hot oven for about 14 minutes until they are golden brown.
