Wash the anchovies, dab dry. Cut 2 anchovies in half lengthwise and roll up into 4 rolls, put aside. Dice the remaining anchovies very finely. Clean and wash spring onions and cut into fine rings.
Wash the meat, dab dry, dice, then chop finely. Season with salt, pepper and Tabasco. Serve the tartar with spring onions, diced anchovies, anchovy rolls and egg yolks.
