Ingredients

  • 1 kg thin zucchini
  • 20 g fresh ginger
  • 350 g smoked tofu
  • 1 Lime
  • 2 Garlic cloves
  • 2 TABLESPOONS Sunflower oil
  • 2 TABLESPOONS Sesame seed
  • 4 TABLESPOONS light soy sauce
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Roasted onions

Directions

    Wash and clean the zucchini and cut the flesh around the core into long thin strips (noodles) using a julienne slicer. Peel and finely chop the ginger. Crumble the tofu. Halve the lime, squeeze the juice.

    Peel and chop the garlic.

    Heat 1 tablespoon of oil in a large frying pan and fry the tofu for approx. 5 minutes, turning it over. After about 3 minutes add ginger, garlic and sesame seeds. Season with soy sauce. Remove from the pan and keep warm.

    Wipe out the pan and heat 2 tablespoons of oil in it. Steam zucchini strips for approx. 4 minutes while turning until al dente. Season to taste with salt, pepper and lime juice. Arrange noodles and tofu. Sprinkle with fried onions.
