12 Cut open the soft apricots horizontally, but do not cut through them. Fill each with 1 level teaspoon of goat's cream cheese (approx. 60 g). Cut 6 bacon slices in half lengthwise. Wrap each apricots with 1⁄2 bacon slices. Fix with wooden skewers. Heat 1 tbsp. olive oil and fry the apricots on each side until crispy.
