Bring 250 ml water and sugar to the boil in a saucepan and let it boil down for 5-8 minutes until syrupy. Cut the vanilla pod in half lengthwise. Scrape out the pulp with the back of a knife. Stir in coffee and vanilla pulp and pod and let it cool down (refrigerate after about 30 minutes)
Remove the vanilla pod and add alcohol. Pour coffee liqueur into 1-2 clean bottles and close them. Enjoy the liqueur immediately or keep it cold
