Clean and wash the cucumber and radishes and cut them into thin slices. Wash chives, dab dry and cut into small rolls. Spread slices of salmon ham with mustard, sprinkle with 3/4 of the chives and roll up.
Spread slices of bread with quark, place slices of cucumber, radish and rolled up salmon ham on top and serve sprinkled with remaining chives. Remaining cucumber and radish slices are extra.
Serve garnished with parsley as desired.
