Italian pasta salad with tomato dressing

Ingredients

  • 300 g Noodles (e.g. Farfalle)
  • 2 Shallots
  • 2 Tomatoes
  • 4 TABLESPOONS dark balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Olive oil
  • 1 bunch of rocket
  • 1/2 bunch Basil
  • 150 g dried tomatoes in oil
  • 50 g Parmesan cheese

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Peel and finely dice the shallots. Wash, clean and quarter the tomatoes. Remove seeds. Finely dice the flesh.

    Season vinegar with salt, pepper and sugar. Add oil drop by drop. Mix in diced tomatoes and onions. Wash the rocket and basil and shake dry. Peel basil leaves, cut half finely and add to the vinaigrette. Drain the pasta and rinse with cold water. Drain dried tomatoes in a sieve. If necessary, halve the tomatoes and mix with the vinaigrette and the pasta. Leave to stand for about 10 minutes. Season salad with salt, pepper and sugar.
