Cook the pasta in boiling salted water for about 10 minutes. Clean and wash the broccoli and divide into small florets. Peel and chop the stems. Cover both and cook in 1/4 litre of salted water for about 5 minutes.
Peel and finely chop the onion. Wash the smoked pork, dab dry and chop. Drain the broccoli and collect the vegetable water. Heat the oil. Fry the smoked pork loin for about 5 minutes, turning it over. Fry the onion briefly.
Deglaze with vegetable water and milk. Bring to the boil, stir in stock and thicken with sauce thickener. Season to taste with salt and pepper. Drain the pasta, let it drain. Add broccoli and noodles to the pan and fold in.
Wash the chives, cut into small rolls and sprinkle on top.
