Divide the cauliflower into florets and cut into slices. Peel the stalk and also cut into slices. Heat oil in a pan and fry the cauliflower for 2-3 minutes. Add the cashew nuts and fry.
Pour on 100 ml water and cook the vegetables until al dente.
Crumble the feta, chop the Parma ham. Add both to the cauliflower and fry for 1-2 minutes. Coarsely chop mint leaves and mix in. Season with salt and pepper, arrange on plates and serve immediately.
