Peel the prawns and remove the intestines. Wash the prawns, dab dry and chop. Cut the mango from the stone. Peel and chop the flesh. Wash and halve lemon and squeeze 1/2 lemon. Cut the other half into slices
Cut the vanilla pod lengthwise and scrape out the pulp with the back of a knife. Heat the oil in a pan. Fry the shrimps for 2-3 minutes. Add 1 tablespoon lemon juice, season with salt and pepper. Mix prawns, vanilla pulp and mango in a bowl and season to taste. Arrange on small plates and garnish with one lemon wedge each
