Winter salad with waxy soft eggs

Ingredients

Servings: 4
  • 6 Eggs (size M)
  • 1 Head radicchio salad
  • 2 Tubers red chicory
  • 1 Lettuce
  • 50 g Salad Mayonnaise
  • 75 g Whole milk yoghurt
  • 1 TABLESPOON Olive oil
  • 1 TEASPOON light balsamioco vinegar
  • 25 ml Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g pickled anchovies
  • 1 Beet Cress

Directions

    boil eggs for about 8 minutes, quench and let them cool down

    Clean the radicchio, quarter it and cut out the stalk in a wedge shape. Wash the salad and cut into large pieces. Remove the outer leaves from the chicory. Remove the remaining leaves, wash and drain. Coarsely chop the chicory leaves. Clean, wash and pluck lettuce into small pieces

    Mix mayonnaise, yoghurt, oil, vinegar and lemon juice. Season to taste with salt and pepper. Peel and halve the eggs. Arrange salad, dressing, 3 egg halves and anchovies on plates. Cut cress from the bed and sprinkle over the salad
