Kassel steaks with rösti crust & leek

Ingredients

Servings: 4
  • 800 g Leeks
  • 7-10 Tbsp Salt
  • 1 package (750 g) Potato pancake batter (refrigerated counter)
  • 1 Egg (Gr. M)
  • 4 Kassel minute steaks (approx. 100 g each)
  • 2 tablespoons (30 g) Butter
  • 2 heaped tablespoons (30 g) Flour
  • 75 g Fresh cream
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Nutmeg
  • 4 TABLESPOONS Oil

Directions

    Preheat the grill on the highest level. Clean the leek, wash thoroughly and cut into rings. 1⁄2 Bring l water and some salt to the boil. Add leek, bring to the boil again and cook covered for about 8 minutes.

    Mix potato pancake batter and egg. Pat the steaks dry and place them in an ovenproof dish. Spread half the potato mixture on the steaks. Grill in the oven on the middle shelf for 12-15 minutes until golden brown.

    Drain the leek and collect the vegetable water. Heat the butter in the pot and sauté the flour in it until light yellow. Stir in vegetable water, bring to the boil and simmer for about 5 minutes. Stir in crème fraîche, season to taste with salt, pepper and nutmeg.

    Heat the oil in two large pans and bake about 12 small Rösti from the remaining potato mixture. Add the leek to the sauce and heat up again. Arrange the smoked pork steaks with leek and Rösti.
