Prawn skewers on garlic mashed potatoes

Ingredients

Servings: 4
  • 2 packets (210 g each; 6 pieces each) raw frozen shrimp skewers (e.g. from Costa)
  • 4-5 (approx. 1 kg) large potatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Arugula
  • 3 Garlic cloves
  • 3-4 Tbsp good olive oil
  • 200 ml Milk
  • 1-2 TEASPOONS Lemon juice

Directions

    Defrost the prawn skewers. Peel and wash potatoes, cut into pieces and cook in salted water covered for 15-20 minutes.

    Clean, wash, shake dry and chop the rocket salad coarsely. Peel garlic. Cut 1 clove into thin slices. Crush 2 cloves finely.

    Heat 1-2 tablespoons of oil in a large frying pan. Fry the skewers and garlic slices for 3-4 minutes, turning them over. Season with salt and pepper.

    Drain the potatoes. Add milk and 2 tablespoons of oil. Mash everything finely. Stir in crushed garlic. Season to taste with lemon juice, pepper and salt if necessary. Fold in rocket. Arrange prawn skewers and garlic puree.
